world. Lambics are produced in tiny quantities in and around the Belgian City of Brussels.
The regions brewers use wild yeasts in the fermentation along with at least 30% raw
wheat. This imparts a unique vinous character with a refreshing sourness and astonishing
complexity. After fermentation, the lambics are aged for up to three years. Most are
highly carbonated and bottled lambics labeled as framboise are a blend of young and old
beers, which result in a sharp Champagne-like effervescence and tart toasty flavors. Those
labeled as Faro have had sugar, caramel or molasses added in order to impart a note of
sweetness. Lambics as a whole however, are frequently flavored with fruits. Kriek (cherry)
and Framboise (raspberry) are the most popular, but other fruits are used as well. Fruit
lambics are unbelievably focused and complex and must be sampled to be believed. Lambics
can be an acquired taste, and, as such, the slightly sweeter fruit styles often provide an
excellent introduction, while drier styles are unmatched in their assertiveness and

Du Bocq Brewery Knights Ale a Belgian Blonde Ale. This specialty beer that offers consumers a unique, full-bodied flavor based on centuries of Belgian brewing techniques and expertise. Unlike other Belgian ales that tend to be more frothy, Knights Ale can be consumed right from the bottle, if so desired. - High Double-fermentation process Knights Ale with its 6% alcohol by volume is brewed in respect to Belgian tradition. Our delicate blend of the finest hops and selective spices give this ale a light smooth flavor with a hint of bitterness, resulting in a full exceptional taste; evidenced by a slight blur and some sedimentation process, with fresh yeast added to each bottle. THE LEDGEND OF THE KNIGHTS The legend of the Aymon Knights from the Bayard cliffs, Purnode of Belgium It was the Emperor Charlemagne who knighted the four Aymon brothers. Yet Charlemagne lived to regret this act of generosity when Raynaud, the eldest of the Aymon Knights, killed Charlemagnes favorite nephew in an act of FAMILY HONOR. The Aymon knights: Raynaud Alard, Guichard and Richard escaped the vengeance of the emperor thanks to their swift and courageous steed Bayard, who carried all four knights away on his strong broad back. While on a run to the hillside of Dinant, the Aymon Knights were suddenly surprised by Charlemagnes troops. Completely surrounded with nowhere to turn, their horse Bayard leaped from the cliffs landing safely on the other side of the Meuse River. Even today, these cliffs still bear the marks of Bayards mighty hooves.
Icobes Brewery Biere du Boucanier is triple fermented bottle conditioned Golden ale produced and bottled by Brasserie Icobes, B.V.B.A. Evergem, Belgium. Biere du Boucanier - is a traditional unpasteurized Belgian bottle conditioned ale, brewed with the highest quality of ingredients and careful selection of light Dutch malt. Hops from Bavaria and the Czech Republic as well as the addition of different top fermenting yeasts and pure water give Biere du Boucanier an excellent genuine quality and extraordinary character originating from an all-natural process. This ale has a primary fermentation at the brewing stage; additional yeast is added prior to placing in holding tanks for several days in a temperature-controlled room where second fermentation occurs. Biere du Boucanier - is then bottled, additional yeast is added for the third re-fermentation which gives this ale an intense and vigorous, richly malted as well as fruity and refreshing taste. continue for several more years. WHY 1549? In the year 1549 a once in a millennium even occurred in the little town of Binche. Every person for miles around attended a great feast held in honor of King Charles V of Spain. Charles V was the undisputed master of the New World with the recent discoveries in the Americas. The feast was arranged for him by his sister, Queen Mary of Hungary. Charless son, who would later become the most powerful person in the western world, Phillip II, was also in attendance. **The entry into Binche of Charles V and his son is depicted on the colorful label of "1549". Every five years the feast, now called the "Triomphes de Binche" is re-enacted in mediaeval costume in Binche. In 1994 the townspeople asked La Binchoises Brewmaster, Mr. Andre Graux, if he would create a commemorative beer for the celebration. Andre gave birth to a new, festive, easy to drink, amber ale and called it "1549". You are welcome in Binche to help us celebrate the
"Triomphes de Binche" again on August 20, 21 and 22, 1999, the 450th anniversary
of the feast. Until then, you are invited to practice for the feast by drinking
"1549" in good health!!!

Grande Reserve is a hand-crafted, highly traditional Belgian specialty. Unpasteurized triple fermented, brewed with spring water, 2 different hops, 3 different malts and without any chemical additives or preservative. It is brewed with a full compliment of brewers spices, some of which are a secret, to create a superlative specialty which is hailed as the finest specialty beer of Belgium. Grande Reserve second fermentation occurs in the bottle and requires several days in a temperature controlled room. Val de Sambre (Abbaye dAulne) Brewery Blanche de Charleroi - the White Beer of Charleroi is a bottle conditioned wheat beer on lees produced and bottled by Brewery Val de Sambre, in Charleroi, Belgium. In 1997 it won the Gold Medal. Blanche de Charleroi - is a traditional unpasteurized Belgian bottle conditioned white beer, elaborated through a first rate selection of barley and wheat originating from an all-natural process. This biological beer (or natural beer made with certified organic barley and hops) has a primary fermentation at the brewing stage. It is then bottled; additional yeast is added for the secondary re-fermentation that gives this beer its sweet and sour as well as fruity and refreshing taste. This beer is brewed to 5% abv.
